Hand-picked grapes from Nemea. Cold soak for 12 to 14 hours at 3o C. We take the free-run juice and the alcoholic fermentation starts and lasts for 3 to 4 weeks. The wine stays sur-lie(on the fine lees) with multiple batonnage weekly for 5 months. The filtration and bottling follows.
