From a 14-year-old vineyard in Asiopia Viotia, yielding 500kg / acre. Sandy soil with excellent drainage, 250m above sea level. Cold soaked at 14°C for 8-12 hours. Fermented in controlled temperature in stainless steel tanks. Half of the wine is placed inside French oak barrels to mature for 6 months sur lie, with the other half fermenting in cement vessels. Harvested by hand.
