From 37-year-old, organic vineyard in Voetia, yielding 300-400 kg / acre. Rocky limestone soil with excellent drainage. Fermented in stainless steel tanks at 230C. Full malolactic fermentation in French and American barriques for 16-18 months. The wine is matured in bottle for a further 12 months.
